Croatina is the grape behind Bonarda, the most popular wine of the Oltrepò Pavese hills.
The harvest is done in late September or early October. The maceration of the juice with the skins for the extraction of the polyphenols lasts 15 days. A second fermentation in autoclave in early spring produces its natural bubbles.
Our Bonarda is a medium-bodied, but rich wine with a deep red colour and purple highlights. The tannins are well balanced by a pleasant bit of residual sugar.
Very food-friendly, it pairs well with salumi, stuffed pasta and roasted meats. To be served at 18 °C.
