Il Colonnello
Provincia di Pavia IGT – Rosso (still)
This wine, produced with the best grapes of our winery, is a traditional Oltrepò Pavese blend of Croatina and Barbera (the percentages here are 80% and 20%, respectively) and it’s named after our ancestor Luigi Fiori, colonel of the Royal Italian army in the years following the unification of Italy.
After a long maceration of the juice with the skins, the wine ages for 6 months in 225 l French oak barriques. In autumn it’s bottled unfiltered and ages for some additional months in the bottle prior to release.
Deep ruby red in colour, it offers a winey nose with notes of coffee and tobacco and an austere and robust palate with good tannins.
Serve it at 18 °C with game meats.
