Il Colonnello

This wine, produced with the best grapes of our winery, is a traditional Oltrepò Pavese blend of Croatina and Barbera (the percentages here are 80% and 20%, respectively) and it’s named after our ancestor Luigi Fiori, colonel of the Royal Italian army in the years following the unification of Italy.

After a long maceration of the juice with the skins, the wine ages for 6 months in 225 l French oak barriques. In autumn it’s bottled unfiltered with no sulphites added. It ages for some additional months in the bottle prior to release.

Deep ruby red in colour, it offers a winey nose with aromas with of red fruits, balsamic overtones and elegant boisé notes, and an austere and robust palate with good tannins.

Serve it at 18 °C with game dishes.
