METODO CLASSICO LE STELLE EXTRA BRUT
Le Stelle is our Metodo Classico sparkling wine. The 2018 vintage has been produced with 100% Pinot Noir grapes hand-picked in small plastic boxes in early August.
The whole bunches are softly pressed. The resulting free-run must ferments in stainless-steel vats at a 16 °C temperature.
Tirage (i.e. the operation by which the base-wine is bottled with yeasts and sugar for the secondary fermentation in the bottle) has been done in spring 2019. The sparkling wine has aged 36 months on the lees.
Le Stelle shows a pale straw-yellow colour and fine bubbles.
The nose is marked by notes of balsamic herbs and hints of bread crust and walnut kernel.
On palate it’s pleasantly fresh with a long finish.
Excellent as a pre-meal drink, it pairs well with a wide variety of dishes.
To be served at 6-8 °C.
